History of Saffron Consumption

Saffron is very attractive in terms of its color and aroma from the earliest periods of history as perfume and aroma, beauty and cosmetic oils, hair color, washing of bodies and idols, the color of fibers and garments, polishing and scenting, animals’ leather/skins for writing and later producing colored papers; producing golden, yellow and red inks and other types of Non- edible materials and consumables were used.

Saffron is a nutritious and colorful food material, and on the other hand, it has a medical, therapeutic and sanitary usage. During the Achaemenid Empire/kingdom ship in Iran (550-330 BC), the cooks and crew used saffron to prepare colorful Achaemenid cuisine, as well as perfume and aroma to Shahriyar's place of residence. In the Sassanid era (224 to 651 AD), saffron was used for adding color and aroma to the foods. Till the Qajar period, saffron consumption in Iran has been much more and consuming turmeric has been less. In this period (Qajar period), the culture of consumption of turmeric was common in Iranian foods.

1) Carbohydrates: About 20% of the stigma content of saffron is made up of reducing sugars. Researchers have reported glucose, fructose, genetic biopsy, and small quantities of giziol and rhamnose.
2) Minerals: The amount of minerals in saffron is between 4% and 8%, which has found elements such as potassium, phosphorus, sodium and chlorine.
3) Vitamins: Saffron is one of the rich sources of vitamin B2, a vitamin that stimulates the growth of the body in young people. It also plays a major role in the health of the skin.
Also, vitamin B1 is one of the saffron vitamins that its deficiency in the body causes fatigue, anorexia, increased irritability and excessive sensitivity, depression, discomfort and neurological pain, and so on.
4) Fats: Existence of fat in saffron has been proven and the pleasant aroma of saffron caused by aromatic oils and escaping in the compound of the stigma.
5) Color of the seeds: Most of the seeds in the saffron stigma are from carotenoid carboxylic group. Among them, crocin is more important. In addition to crocin, in order to determine the authenticity of saffron, the amount of picrocrocin and safranal are also measured.
